Happy Good Friday!
This morning has been a quiet, slow start. The girls are out of school and I had no reason to wake up super early except to drink coffee and have my dogs stare at me until they were fed. If it’s not the kids, it’s the dogs.
Today we have no agenda and we’re kind of just waiting to see what the weather will do. Why does Florida weather gotta be so sketchy?!
I still have all my work here at home (from Spring Break) so before the kid’s wake up and start the craziness I can get some work done, right after I post this last Spring-inspired salad for the week!
If you haven’t been following, this week I’ve been sharing my favorite Spring-inspired salads and today is definitely not the last one…just the last one of the week.
If there’s one thing I love it’s freshly massaged salads. There’s something about tender greens massaged with olive oil, lemon juice, and salt that I can’t turn away…ever.
Also, I don’t usually like cold asparagus on my salads, but I tried something different, served it chilled, and glad I did! It went perfectly with a simple balsamic baked chicken.
You can top the salad with warm asparagus if wanted, totally up to you!
