Cinco De Mayo is upon us! On Thursday, everyone and their madre will partake in buckets of chips and salsa, tacos, and Corona beer. Ain’t nobody mad about that menu, except for me because I can’t have the beer. Sooooo, more tacos for me!

Tacos are such fun things to make because the filling options are endless. You could put almost anything on a tortilla, top it with cheese, and I’d eat it. Just kidding…I have my limits. 🙂

I had an overload of avocados and after days of eating guacamole I needed something else to do with them.  I married Meatless Monday with Taco Tuesday and hello Baked Avocado Tacos!


The baked avocados by themselves were a hit (dipped in ranch dressing), and putting them on tacos with other toppings put them over the edge of goodness.

Tip: Make sure the avocados are a bit firm before using. If you think they’re too ripe, pop them in the fridge for a few hours before slicing.
