Happy hump day!
This week we are on a roll with bringing you Spring-inspired salads and maybe some inspiration for your Easter dinner menu. To get you over this hump of a day, today we have yet another highly refreshing salad!

I have to admit I need to do this way more often, because I’ve been eating yummy salads for lunch all week! Thank you guys! 🙂

The best part of all these salads is how easy they are to make and devour all during your lunch break. But, let’s share the joy and make them for dinner parties too.

With most salads I simply use a combination of oil, vinegar and a pinch of salt for the dressing. I was roaming around Fresh Market the other day and got sucked into their vinegar aisle. Who knew there were 5,894 (not an accurate number) different kinds of vinegar available for us to top our salads with?

Since my pregnant self can’t drink actual Champagne, I opted for the Champagne vinegar (it’s the closest I’ll get right now) and topped this Citrus & Avocado salad with it. I can sit here and write out 5 different synonyms  for delicious to describe this salad, but just go ahead and make it for yourself.
