Mornings are chaotic…like really chaotic! Getting everyone out of bed and out the door is almost always a struggle that can lead to no breakfast at all.I hate when that happens because I truly believe breakfast is the most important meal of the day, especially on school mornings.

Eating breakfast is linked to many amazing benefits like better memory and concentration, and overall good health. I know I definitely need the fuel to get through my mornings, or I’m a total grump come 9:00 am!

Eating a “healthy” breakfast during the morning rush is also a huge challenge. I’m so quick to hand my kids a bag of sugary cereal or processed mini muffins that you know probably have nothing good in them. I tell myself “at least they have something in their stomachs!” to make me feel better. 🙂 The struggle is real and I know we can’t get down on ourselves for little things like this, but when I actually take 30 minutes out of my weekend to prepare some breakfast cookies or muffins with real ingredients, I wonder why I don’t always do it. Well, because momma is tired y’all.

When I remember to plan ahead, I love having things in the house that are easy to grab on the way out the door, with simple and good ingredients. There are tons of great granola and breakfast bars on the market now that will do that trick, but these Banana Breakfast cookies are where it’s at if you want the best bang for your buck and stomach!

Banana Breakfast Cookies

Prep Time: 10 minutes

Cook Time: 15 minutes

Total Time: 25 minutes

Yield: 24 small cookies

Quick and easy Banana Oat Cookies to enjoy in the morning or throughout the day for a source of energy.

Ingredients

  • 3 ripe bananas, mashed
  • 2 cups old fashioned oats
  • 1/2 cup applesauce
  • 1/4 cup almond milk
  • 1 tsp vanilla
  • 1 tsp cinnamon
  • 1/2 cup chocolate chips
  • 1/4 cup raisins
  • 1/2 cup chopped walnuts

Instructions

  1. Preheat oven to 350 degrees F.
  2. Mix all ingredients in a large bowl
  3. Place large spoonfuls of batter on a greased baking sheet. Gently press down with a fork to flatten.
  4. Bake cookies 15-18 minutes.
  5. Cool + enjoy!
  6. Store in refrigerator
