I hope everyone had a restful weekend and back on the grind today following your dreams!

Since I haven’t been cooking too much and we’ve been eating vegan dinners for the past month, it’s nice to get back in the kitchen. It was a VERY nice break, but it’s over and I’m back to adding dinner planning onto the agenda… and meat back on the table.
This weekend Angelo requested steak, so we fired up the grill and cooked a bunch of meat (for the first time in a month). He was really missing his steak and potatoes.
I don’t have anything against meat (entirely), but I don’t like to eat it everyday and I’ve cut it down to only consuming a few days a week. If anything, I don’t like to eat a lot of red meat. Although I think there are MAJOR health benefits to being a vegetarian and/or vegan, I just can’t cut the meat out 100%. Maybe when my kids aren’t requesting chicken every night.
Side note: They will eat anything if you tell them it’s chicken, even tofu, but I’m not a fan of tofu.

I have stuffed sweet potatoes with such a variety of items over the years and it may be one of my favorite things to do.
I could eat sweet potatoes everyday, especially when stuffed with tasty savory fillings. They make such great satisfying meals full of color and flavor!
