Y’all! It’s Friday and it’s been an exhausting week of school events, work, doctor appointments, and life! All i want to do this weekend is hang out, veg out, and eat desserts! 🙂
February ended this week and it seriously flew by, while January took 9 years. Valentine’s Day may be over, but that doesn’t mean my love (for desserts) does. A few weeks ago ENVY Apples sent me the sweetest Valentine’s Day present, a case of red apples! My family eat those up {BITE & BELIEVE}, saving the last few for an amazing delicious dessert.  Apple pies or Apple Crisps are some of my favorite desserts, but not ones I whip up in the kitchen too often. Actually,  I’m intimidated by pie crusts so an Apple Crisp is my way to go. Served with vanilla ice cream, of course!
This recipe is super easy to make once you get over the apple peeling. Bonus points if you own an apple peeler! Even without an apple peeler, I had the apples peeled and sliced in about 5 minutes.
Your house will smell incredible making this the perfect recipe to swoon any guest or man in your life.
I used all vegan ingredients for this recipe because that’s what I have in my fridge. Regular milk and butter will do just as good, so don’t be swayed away by the ingredient list. Every recipe is adaptable! i.e. Double the recipe for a dinner party!

Ingredients
- Apple Filling:
- 4 Envy apples, peeled and thinly sliced
- 1 tbsp lemon juice
- 3 tbsp Earth Balance (Vegan butter), melted
- 2 tbsp flour
- 3 tbsp almond milk
- 1/2 tsp vanilla extract
- 1/2 tsp ground cinnamon
- 1/4 cup brown sugar
- Pinch of salt
- Crumb Topping:
- 1/2 cup flour
- 1/2 cup old fashioned oats
- 1/2 cup brown sugar
- 1/2 tsp baking powder
- 1/4 tsp ground cinnamon
- Pinch of salt
- 1/3 cup Earth Balance (Vegan butter), cut into small pieces
Instructions
- Preheat over to 375 degrees F.
- Prepare the Apple Filling:
- Wash, peel, and thinly slice all apples.
- In a small bowl, combine melted butter and flour with a whisk. Add rest of 'apple filling' ingredients and stir to combine.
- Toss apples in the mixture so that all are covered.
- Pour the apples into baking dish.
- Prepare Crumb Topping:
- In a medium bowl, combine all dry 'crumb topping' ingredients. Add small pieces of butter with a fork so that it forms crumbles.
- Pour evenly over apples.
- Bake for 30-35 minutes, or until top is golden brown.
- Remove from oven and allow to cool and thicken up for atleast 5 minutes.
- Serve with vanilla ice cream of choice.
